The workshop is organized by the Institute of Sanitary Engineering in cooperation with the Institute of Food Science as pre-conference workshop to the 4th International ISEKI_Food Conference. The workshop is dedicated to bridge the gap between activities in water and food science research. PhD students are invited to present their work connecting water and food from different perspectives.

The link between food and water

Water and food security

The UN states that the link between food and water is a very simple one. The entire agricultural production chain needs available water resources in meeting growing demands for food and other agricultural products. Further, food security is affected by immense food waste along the value chain, meaning that water used for production is also wasted.

Water and food safety

In parallel the quality and safety of water, including water resources, water treatment and finally waste water in primary production and for food processing is crucial to ensure safe food for the consumer. From a hygiene perspective water during food processing e.g. for sanitation purposes, recirculation, etc. plays a major role in the transmission of potential pathogenic microorganisms.

Objective

The objective of the workshop is to provide state of the art knowledge exchange and critical discussions in the field of water in and for food processing.

During the workshop, the following major topics will be addressed:

  • Water quality indicators
  • Water use for primary production
  • Water use for cleaning and sanitation
  • Water as food ingredient
  • Water for food processing operations
